Kuttu ki Puri Recipe
Buckwheat flour Puri crispy and tasty puris are made with buckwheat flour or kuttu ka atta good taste with curd.This is gluten free recipe and during fasting occasions like Navratri, Shivratri or Ekadashi.Kuttu ki Puri is an interesting North Indian recipe.kuttu ki atta generate warmth in your body,so it is advisable to serve any dish made with yogurt on side,because yogurt is cooling for your body.kuttu ki poori can be made plain just with the buckwheat flour and making with sendha namak.

Ingredients:
1 cup buckwheat (kuttu)
1/2 tbsp sendha namak
1 1/2 cup groundnut oil
1/2 tbsp cumin powder(optional)
1/2 tbsp spice black pepper(optional)
Half cup Boiling water
Tools:
Rolling pin
Deep fry pan
Bowl
Mixing Spoon
Preparation:
In a bowl add buckwheat flour and cumin powder,black pepper,sendha namak once mix well with spoon.Now add hot water.Mix dough with spoon and close with lid till the mixture cool down.once the mixture cool down begin to knead it.while kneading add warm water if required.1tto 2 tbsp water can added.knead smooth dough.the dough should not be sticky.otherwise you won't be able to roll puris.
Method:
Divide the dough into small balls.take a ball and spread little bite oil both sides,roll with rolling pin or make round circle in chapati maker.you can keep these puris slightly thick dont make thin.Heat oil for deep frying in deep fry pan gently add one puri fry on medium flam.the puri will become on the surface and also puffiness.fry the second side also till it turns crisp and golden.make all puris like this.place the puri into paper towel to remove excess oil.serve the kuttu ki puri with dahi arbi or vrat ke aloo or dahi aloo.
Tips:
- you can add 2 medium boiled,mashed Indian potatoes.Add boil and mash potatoes while mixing smooth dough.And knead smooth dough to make puris.
- If the puris doesn't puff then gently nudge and press the surface with slotted spoon so that puri puffed up.
