The fasting season can be tiresome and boring without the spice food and delicacies, to minimize your cravings of mid time snacks we have this fermented dhokla made with samvat chawal,special rice used during the festival of Navratri or any upvas. Tempered with whole red chillies, cumin, ghee and curry leaves. Sama rice or barnyard millets/mordhan/moraiyo is a gluten-free grain which behaves like rice and is a perfect fasting ingredient.

How to make Sama ke Chawal ka Dhokla:

Ingredients:


For the dhokla:
1 cup sama ke chawal
3 cups buttermilk
salt to taste
For the tempering:
3-4 green chilies slit lengthwise
3-4 sprigs curry leaves
2 tsp peanut oil
1 tbsp sugar
1 tbsp lime juice
1.5 cup water

Tools:


Food processor
Blender
Steaming Vessel
Pan for tempering
Microwave baking cup
Parchment
Baking sheets
Baking tray

Preparation:


Soak the rice in the buttermilk and salt overnight.Make a batter of the rice by blending it in mixie or food processor.

Method:


Mix well and pour into a greased plate or steaming vessel. Steam till set and cooked.Approximately 10 minutes.Let it cool completely. Then cut it in squares.
For the tempering, heat oil in a pan, tip in the hing and rai seeds and let them crackle. Add the chilies and curry leaves and stir them to let them cook and release their aroma. Pour water and add the sugar, let it come to a soft boil.

Take off the heat, add the lime juice and pour over the steamed dhokla. Let the sweet and sour water soak in, it will all disappear within 5 minutes. The dhokla will swell up so make space for them by removing a few from the plate.

In Microwave Oven:


Pour the mixture in a microwave baking cup.Cook for 30-40 seconds.Light and airy microwave dhokla.Allow it to cool for few seconds and invert it over.Prepare tempering as explained above.Pour over dhokla and serve.For a big batch microwave dhokla for 1 minute or until the toothpick comes out clean.Cut into squares, pour tempering and enjoy with vrat ki chutney.

Tips:



  • You can Prepare the batter and ferment overnight also.by mixing rice, rock salt, chilli paste, ginger paste and yogurt. Leave the mixture to ferment overnight. It will become a bit spongy.

  • You can add sabudana also,if you like.

  • samak rice can be used as kheer,khichdi,idli,dhokla or dosa.


This is also called as Vrat ka dhokla.
