Ingredients:


2 sheet frozen homemade puff pastry (To know ingredients and method of How to make homemade puff pastry click here )
2 cups granulated sugar/brown sugar
1/8 tbsp kosher salt

Measuring cups

Parchment or baking mat

Preparation:


Prepare the puff pastry.

Combine the sugar and kosher salt.Sprinkle work surface with the sugar.Preheat the oven to 450 degrees F.

Method:

Place the puff pastry on top and roll to a rectangle 8 by 26 inches and approximately 1/8 inch thick, continually sprinkling with additional sugar to prevent the dough from sticking.Roll over it lightly with a rolling pin to press the sugar into the dough.Fold the left and the right sides of the dough inward so they meet in the middle.Sprinkle the remaining sugar over the dough. Again, roll over the dough lightly to press in the sugar.Fold the left side over the right side, like closing a book(Shown in above picture). This should make a very long, flat length of dough with the first two folds sandwiched in the middle.Transfer the log to a baking sheet. Cover with plastic wrap and chill for 30 minutes to give the dough time to firm up. This will make them easier to cut and also help them puff better in the oven.

Transfer to baking sheet:


Transfer the cookies to a parchment lined baking sheet, laying them cut-side up. Sprinkle the cookies with more sugar, if desired. Make sure to space the palmiers a few inches apart they will puff quite a lot in the oven Bake in batches if necessary, place the unbaked cookies in the fridge to chill between batches.Bake for 10 mins.Turn over and bake until golden on bottom, 5 to 7 minutes more if need, then transfer to a rack to cool completely.

Without Oven:


Take a Thick and heavy bottom pan or pressure cooker spread a 1 inch layer of salt or sand inside the cooker.Keep the stand or any height plate on the sand to raise height.Switch on the flame and preheat the pressure cooker/pan in high flame with sand for 10 mins.

Grease the aluminium cooker container or any  aluminium  bowl or  tin or dust with flour.Place the cookies in greased bowl and keep the bowl in preheated cooker or Thick and heavy bottom pan by using tons because it will be very hot and reduce the flame to low. close the cooker lid without using any weight or whistle.Bake for 15 mins until cookies edges become brownish and Thick and heavy bottom pan or pressure cooker bottom becomes starting brown once its become strsted become brown switch off the flame and don't open the lid cook for 5 mins inside the cooker.Cool down completely and open the lid.The cookies will be soft but once it cools it will become crisp.

Tips:



  • The sugar softens the dough, so be sure to work quickly but carefully while rolling, forming, and slicing your palmiers.

  • Roll up your palmiers tightly to give a better end shape and make sure you chill them before baking.

  • Use all butter puff pastry for a better flavour.
