Papadums are called appalam in Tamil Nadu, pappadum in Kerala, appadam in Andhra,Vadiyaulu in Telangana, happala in Karnataka, and papad in other parts of India.Papadums are mainly made in Rajasthan and Maharastra in the north. In the south, Kerala, Madurai district in Tamil Nadu, Kanchipuram, and Chennai are major pappad or appalam manufacturers.
Papadum recipes vary from region to region and from family to family. They are typically made from flour or paste derived from either lentils, chickpeas, black gram (urad flour), rice, or potato.
Salt and peanut oil are added to make a dough, which can be flavored with seasonings such as chili, cumin, garlic, or black pepper. Sometimes, baking soda or slaked lime is also added. The dough is shaped into a thin, round flatbread and then dried (traditionally in the sun), and can be cooked by deep frying, roasting over an open flame, toasting, or microwaving, depending on the desired texture.
There are different varieties of papadam like chickpeas, green grams, black grams, Potato, Rice, etc. Bikaner is the hub of chickpea and green gram papadam manufacturing. Potato Papadam is made in Varanasi. Most sweets and snack selling national companies are also involved in this business like Haldiram, Bikanerwala, Mishrambu, Lijjat, Shri Shyam Papad, etc.
In most curry houses in the United Kingdom and Australia, they are served as an appetiser with dips which often include mango chutney, lime pickle, onion chutney and raita.

Chawal Aata Ke Fryums or Rice Flour Chips is a very easy recipe with few ingredients and efforts involved. It is unlike the potato or banana chips which involve peeling, slicing. This recipe just involves rice and few spices/masala. Cook the rice flour with water and spices and then spread the thick mixture on plastic sheet under Sun or inside home under a fan. These chips take 4-5 days for drying (depending on temperature and season). These dried chips can be stored for 7-8 months in air tight container and deep fried whenever required. everyone loves the fryums and they are very delicious. Dal papads like Moong Dal,Chana Dal,Urad Dal.Uddina Sandige / Urad dal Fryums . They are called as Manipa Vadiyalu in Telugu and are very close to Tamilnadus Kuzhambu Vadam and North India’s Urad Dal Wadi. These fryums are extremely easy to make. The spicy Ural dal fryums are most favorite ones along with aralu sandige to every one . These urad dal fryums will surely perk up any meal when served as accompaniment with dal ,lemon rasam ,curd rice or when added into any curry.And these uddina sandige,moong dal can also used to make curries which i’ll post later.For now lets see how to make these fryums. Made with Atukulu (as Poha or Beaten Rice is called in Telugu), these vadiyalu are very easy to make and need very few ingredients.

It is also called Sukhi Dahi Mirchi in Hindi and Sun Dried Curd Chillies in english.
