Sabudana Vada Recipe-Tapioca Pearl fritters
Sabudana vada is specially served in fasting like navratri and upvas and festival season in India as it contains no onion and garlic.This is traditionally Maharashtrian recipe served at breakfast or snack time. Sabudana vada is one of the most common ingredients cooked during fasting.sabudana is basically the starch extracted from the roots of tapioca.It is a good source of carbohydrates and is used in recipes like Sabudana Vada Pancakes,Aloo Sabudana, Sabudana Khichdi, Sabudana fryums,sago papad,Sabudana Thalipeeth and a delicious Sabudana Vada. It is also an ingredient in Bubble Tea and fruit slash.
Sabudana Vada often known as Sabudana Vadai,Sabudana Cutlet,Tapioca Pearl fritters or Sabudana Tikki is a deep fried Maharashtrian appetizer which makes for a very good evening snack or breakfast. Since it is made using gluten free ingredients, it is perfect to serve it for Indian Fast Days or Vrat.
During Navratri, a 9-day Hindu festival, many people abstain from wheat and other grains, lentils, onions, garlic, and common salt.

How to make Sabudana Vada Recipe:

Ingredients:
1 Cup Sabudana (Sago/Tapioca Pearls)
2 Potatoes, boiled and mashed
1-2 Green Chillies, finely chopped
1/2 Cup Peanuts, roasted and Skin removed ,coarsely ground
1/2 tbsp Jeera/Cumin Seeds
2 tbsp Lemon Juice
1/2 tbsp Red Chilli Powder
1/2 tbsp Coriander Powder
1/2 tbsp Cumin Powder
1 tbsp or Rock Salt or taste adjust
Oil for Frying

Preparation:
Soak Sabudana (Tapioca) in water overnight for 5-6 hours. When they have become soft, drain all the water using a colander.Boil, peel and mash 2 potatoes. Add them to a large mixing container along with the sabudana.Roast and coarsely grind 1/2 cup of peanuts. Add these to the mixture as well.Add Red Chilli Powder, Cumin Powder, Coriander Powder and Salt.Add rest of all ingredients.Mix all the ingredients well.
Method:
Heat oil in a non stick frying pan.Make small balls from the dough.Flatten them like a cutlet.If it is too sticky, apply little oil on your palms.Fry the vedas in hot oil ton high heat till golden brown from both the sides.Serve hot with coriander chutney or tomato ketchup or dahi arbi or Tamarind Chutney,sweet Tamarind Chutney(date tamarind chutney).
Tips:
- For potatoes, I prefer to grate them as it ensures there are no pieces.
- When frying try with one vada first. If it breaks, add more potato and/or flour.
