Healthy Kuttu Ka Dosa-Buckwheat Crepes/gluten-free crepes
This is upvas(fasting) recipe specially navratri.It also called as falahari dosa or vrat ka dosa.Buckwheat Crepes/Kuttu Dosa are crisp and very healthy.No more boring vrat ka khana filled with oil.Buckwheat Crepes (Kuttu Dosa) is an instant gluten-free crepe/dosa using buckwheat flour (kuttu).Does Not requires grinding,soaking less time takes which does not compromise on the taste.It is good source of zinc,iron,protein.Who are trying to lose weight this recipe will help them.

How to Make Kuttu Ka Dosa-Buckwheat Crepes Recipe:

Ingredients:
1 cup Buckwheat flour (kuttu)
2 Tbsp Arbi (colocasia), boiled(optional)
Rock Salt (Sendha Namak) - You can use any salt as per taste
1/2 tsp Ajwain (carom seeds)
1/2 tsp Red chilli powder
1 tsp Ginger, chopped
1 tsp Green chillies, chopped
Ghee (clarified butter) or oil
1/2 tsp Green chillies, chopped
Preparation:
In a bowl, mash the arbi and mix it with the flour and salt.Add some water and mix well.Add the ajwain, red chilli powder, ginger and green chillies and mix again.Keep adding water and stirring in one direction till the batter turns into a smooth flowing consistency.
Method:
Heat a flat pan, sprinkle a bit of ghee on it, pour a ladle of the batter and spread it.Cook for a few minutes and spread more ghee around the edges to make it crisp.Now flip it over and cook the other side.Serve hot with mint and coconut chutney or serve with crunchy peanut raita.

Tips:
- you can make plain Buckwheat flour dosa, Buckwheat flour mix with buttermilk,add 1/2 tsp Ajwain and make plain crepes.

- Heat ghee in a pan, crush the potatoes into it and mix in 1/2 tsp Red chilli powder,1/2 tsp Ginger chopped,send lavan to taste.Toss the potato mixture around for a few minutes till it becomes light brown in colour.Take it out and keep aside.Heat a flat pan, sprinkle a bit of ghee on it, pour a ladle of the batter and spread it.Cook for a few minutes and spread more ghee around the edges to make it crisp.Now flip it over and cook the other side.Now put some filling on top and fold the dosa over it.Serve hot with mint and coconut chutney.
- You can use paneer filling also if you like.
