Fried onions Ulli Vadiyalu Sun Dried Onion Fryums

From sun dried recipes one more tasty recipe is Fried onions.When we fry them in the oil, they look like onion pakoda. Making them is very easy.
Preparation Time: 10 mins
Cooking Time: 5 mins
Drying Time: 1-2 Days
Fraying Time (for a batch of 50g): 3-4 mins
Total Time: 5 Days 15 mins
Serves: Makes 150-200 gm

Ingredients:
Black Gram/Urad Dal - 1 cup
Onion - 2 Large
Green Chilli - 7 to 9
Salt - to taste
Cumin Seeds - 1 tbsp
A pinch of hing
Food color (Optional)
Preparation:
Soak Uraddal for 3 hours.Grind it to a fine and smooth paste. The consistency of the batter should be very thick, thicker than that of vada batter. Do not add water. Chop onions length wise. Make paste of salt, green chillies and cumin seeds.Add chilli paste, onions to grounded black gram batter,add pinch of hing. Once we add onions and chilli paste, the batter become a little bit loose. Mix well.
Method:
Spread a plastic sheet under the sun. With the help of a spoon place the batter to make ulli vadiyalu. Let them dry completely. They will take two to three days to dry completely. Once they are dried completely store them in an airtight container.Heat about 1/4 cup of oil in a pan. When the oil is hot lower the flame and add sufficient quantity of dried onions and fry. Fry them till they attain golden color. Remove them immediately or else they turn dark in color. Even when they are removed from the hot oil they change color because they get fried further with the heat retained in them. So it is better to remove them as soon as they start changing color. Use these fried onions in Biriyanis and Pulaos to get that extra crunchy taste.

- In this recipe urad dal using as binding agent.For biryani onion recipe use less urad dal(urdadal 60 grams,400 grams of onions).And only for Vadiyalu you can use more quantity of urad dal or use equal portion of both urad dal and onions.
- If you dont want oil fry you can use air fryer without oil you can fry these fryums. or you can use microwave oven.
- Make the batter thick only.Don't add too much water while grinding .
- Don't skip adding hing .

Biryani Onions Recipe:

Usually for Biriyani recipe we use deep fried brown onions. When onions are deep fried and browned, they absorb lot of oil. So we feel heavy after eating the Biriyani in which these browned onions are used. To avoid that we can substitute them with these sun dried onions which are fried in little oil. To get that crunchy texture we are using black gram as a binding agent. If you want extra crunchy onions use some more black gram and dry the onions. In summer season prepare these sun dried onions in large quantities and store them. As and when required just fry the sufficient quantity of these onions in oil and use them. They are not heavy on stomach compared to the deep fried browned onions.
