Sabudana Kheer Recipe
Best suited for religious fasts and also suitable for babies,Sabudana kheer is an amazing Indian dessert. Full of energy and carbohydrates, it is a wholesome diet of carbs. Sabudana is easy to digest and has a cooling effect on our digestion system and which is why it is also used to check an upset stomach or diarrhea. Since it does not have a strong flavour of its own, it can be blended well with any kind of spices or sweet.
This quick and easy recipe can be a great saviour for unexpected guests,prepared in less than 20 minutes, . You can add saffron or dry fruits to this kheer and enhance the taste as well as the presentation of the dish. It is advisable to soak sabudana overnight so that they run out of capacity of soaking and do not stick together when cooked in milk.

Ingredients:
1 Cup Sabudana (tapioca)
1 1/2 cup Sugar/Jaggery
One litre Milk
4 Cardamom pods
Some cashew Nuts and sliced pista,almonds
Few Saffron color flakes
1 tbsp ghee

Preparation:
Soak the sabudana in water for 15 minutes.
Method:
Boil milk with the sugar and cardamoms and add the sabudana after draining the water. Add 1 cup of water.Boil until the sabudana becomes swollen and translucent.Soak saffron flakes in a 1/4 cup of hot milk for 10 minutes.Mix for color and add all of it to the boiling milk.Switch Off flame.Add fried cashew nuts with kheer and garnish with cashews,sliced pista,almonds.Serve as chilled or hot.
Tips:
- If you use jaggery Add jaggery and little water to vessel.Heat it till it melts and filters to remove impurities.Cook till the syrup thickness.Make sure cool this completely then add to kheer otherwise the kheer will curdle.
- You can add milk made also,if you want.But reduce sugar/jaggery quantity.
