Easy Peach Turnovers Recipe
Using puff pastry and fresh fruit we can make amazing healthy and crunchy delicious Easy Peach Turnovers Recipe.This is quick and very easy recipe.For this recipe you can use raw or canned peaches, both will work well.You can season them any way you like to suite your taste.

Ingredients:
2 cups peaches, from about 2 large peaches Peeled and sliced
2 tbsps brown sugar
4 tbsps sugar, divided
2 tbsps instant tapioca
1/2 Nutmeg (Optional)
1/8 tsp almond extract(Optional)
1/2 tbsp salt
1/2 tbsp cinnamon
1/4 tbsp juice from 1 lemon(freshly squeezed)
2 sheets of puff pastry
1 egg, lightly beaten with 1 tbsp water/milk
1/2 corn starch

preparation:
While you are slicing the peaches, save the juice.Combine peach juice with sugar and cornstarch in saucepan. Cook until thick and bubbly.Add peaches, butter, cinnamon and nutmeg and brown sugar, 2 tbsp sugar, tapioca, salt, cinnamon,almond extract and lemon juice and cornstarch. Cool slightly.
Method:
Lightly roll out each pastry sheet on floured surface.Cut each sheet into 4 squares.Place some of peach filling on half of each square. Brush edges with beaten egg. Fold over into a triangle (or rectangle) and press to seal edges or crimp with fork.Place on baking sheets or Parchment Paper.Bake at 400º for 10-15 minutes until lightly brown and puffy.Cool on racks.Sprinkle with powdered sugar. Or frost with a powdered sugar frosting.Serve warm or in room temperature.
