Semolina or sooji Rava Idli is south indian recipe.This is an instant idli recipe made from semolina, yogurt.Rava idli recipe don't need soaking, grinding and fermenting process.

Ingredients:
1 cup rava (semolina or sooji)
1/2 cup sour curd/dahi
3 to 4 chopped green chillies
1 tsp mustard seeds
1 tsp chana dal
2 tbsp ghee
pinch of baking soda(Optional)
10 cashew(chopped cashew nuts)
hing(optional)
3 to 4 tbsp water
Salt as required
Few chopped coriander leaves
Few chopped curry leaves
1/2 cup Chopped carrots
Oil
Preparation:
Heat oil in a pan, add mustard seeds, when mustard splutters, add hing and urad dal.When dal changes colour, add cashew nuts, ginger, green chilli and curry leaves.Then add rava and roast it nicely for a few minutes.Stir carefully otherwise be burn.Allow it to cool,after cooling add curd stir well without lums,add finely chopped coriander leaves, carrot, baking soda and needed salt. Add water little by little and mix it well without lumps.Keep the batter a side for 15-20 minutes.
Method:
Using steamer:
Grease idli mould with oil. Pour idli batter in the holes. Place in a steamer, and cook for 15-20 minutes. Remove from heat. Leave to cool down slightly. Open steamer, and remove idli from the moulds. check the idli with fork,insert the fork in idli. If the batter comes out clean, then the idli has been properly cooke.Repeat with the rest of the batter.
Using rice cooker:
Grease idli mould with oil. Pour idli batter in the holes.Pour some water(approximately 2 cups) in rice cooker squeeze 2 to 3 drops of lime juice.Place the idli moulds in rice cooker,Cook for 20 minutes and remove outside,serve hot with chutney.
Using Microwave:
Apply oil on the microwave idli container and pour idli batter into the moulds.Set the microwave for 3 minutes on medium power.When the idlis are prepared, with a help of a knife/Spoon,remove them from the microwave idli container and transfer in a serving bowl,serve hot with chutney.
Tips:
- Serve the Rava Idlis with coconut chutney or tomato chutney or molagapodi.
- For rava Idlis if you don't like baking salt you can add eno or fruit salt.
- For Masala rava Idlis ,you can add pepper, ginger ,grated coconut and chopped vegetables which you like.
- You can replace the cashew nuts with peanuts.
