Red Rice is good for health More than White rice.Red rice is a special variety of rice that is red in color. It derives its rich red colour from an antioxidant called anthocyanins.Red rice has a nutty flavor.Compared to polished rice, it has the higher nutritional values.The germ of the red rice is left intact which makes it rich in fiber, vitamins, minerals and essential fatty acids.

Due to presence of fibers, the sugar is absorbed slowly hence blood sugar levels always in control.Red rice is organic food, Including red rice in our daily diet helps in reducing cholesterol and it controls your weight gain.Red Rice contains zero cholesterol. The antioxidant in red rice is beneficial to reduce symptoms of inflammation, cancer prevention and weight loss management.

Dosa is popular South indian Breakfast recipe,most of the south indians eats dosa as dinner also.Dosa and uttapam are Indian crepes must try these recipes.Red dosa can called as Sigappu Arisi dosa and Pirandai Dosai.

Ingredients:


1 1/2 cup Red rice
1/2 cup Whole Urad Dal (with skin/without skin)
1 teaspoon Fenugreek Seeds
Hand full of Red aval
Salt to taste
Water as per required
Oil for cooking

Preparation:


Soak red rice separately and Soak whole urad dal,fenugreek seeds and red aval separately for 6 to 8 hours.The level of water in above 1 1/2 inch in red rice in the bowl.Same procedure for whole urad dal,fenugreek seeds and red aval also.

First grind the whole urad dal,fenugreek seeds and red aval  make fine paste of it using with little enghough water.Batter will look like fluffy.After that grind red rice using with required water make fine batter.Don't use too much water it makes the batter watery.Combine the both batters Red rice and whole urad dal and stir well.Keep aside for overnight or at least 2-3hr for fermentation.

Method:


Take fermented batter and make stir well.If need more water you can add as per required dosa batter,don't make too watery.Heat iron tawa or non stick pan when it becomes hot grease the pan/tawa with oil or butter pour ladle of batter in center of tawa.Spread it into circular motion.Drizzle few drops of oil the dosa around the dosa when it lifts up turn another side.Cook well and serve Hot with the onion chutney or peanut chutney or tomato chutney.

Tips:



  • Fermentation takes in summer very well,In winter season it takes more time.If batter not fermented well you can keep in oven.Turn on the oven light keep till oven become warm,Once the oven became warm turn off the light and keep batter for ferment.If your oven does not have light preheat the oven to warm and turn off,keep the batter in oven for ferment.If the fermentation process done correctly the batter will become double or triples its quantity.You can same procedure for idli batter also.

  • Organic red rice contains richer in fiber and antioxidants.

  • If you want make uttam with red rice you can use same batter but dont add water,and add sweet corn and finely chopped onions and  grated carrot,cabbage.You can also add mushrooms finely chopped.

  • You can make cheese red dosa also by using grated cheese spread over dosa.
